Gluten Free Marble Brownies with Sweet Potato and Chocolate Chips

I have been trying to perfect my brownie recipe. Every time I make some, I end up switching things up based on my mood. Today, I went from planning to bake some marble (cheesecake) brownies to deciding to do a gluten free version with the addition of some leftover mashed sweet potato that I had intended to use to make some Sweet Potato Bread, but thought I didn’t have enough. I also sprinkled some chocolate chips on top!

Brownie Recipe

1/2 cup Gluten Free Flour

2 Tablespoons Cocoa Powder

1/2 teaspoon Salt

1/2 teaspoon Baking Soda

1/2 teaspoon Baking Powder

1/2 cup Unsalted Butter

3 ounces Chocolate (bittersweet and semi-sweet)

1/2 cup Turbinado Sugar

2 Eggs

1/2 teaspoon Vanilla Extract

1/2 cup Mashed Sweet Potato

1/4 cup Chocolate Chips

Cheesecake Filling

1 Package Cream Cheese

1/3 cup Vanilla Sugar

1 Egg

1/2 teaspoon Vanilla Extract

1. Mix dry ingredients together; gluten free flour, cocoa powder, salt, baking soda, and baking powder. Whisk and set aside. 

2. In double boiler, melt chocolate and butter together. Add turbinado sugar

3. Remove from heat. Add eggs and vanilla extract. Whisk well. 

4. Add dry ingredients to chocolate mixture. 

5. Preheat oven to 350. Grease pan. ( Suggested: 13×9″) I use butter and a sprinkle of the flour/cocoa mixture to coat pan. 

6. Scoop out 1/2 – 2/3 cup of brownie mixture in separate bowl with mashed sweet potato. Mix together. 

7. Pour remaining brownie mixture in pan. 

8. Add ingredients for cheesecake filling in a bowl; cream cheese, egg, vanilla sugar, and vanilla extract. Blend well using hand mixer. 

9. Scoop 1/2 of cheesecake filling in dollops on to brownie batter in pan. Scoop Sweet Potato brownie mixture in dollops on to pan. Scooo remaining cheesecake filling in dollops on to pan. Spread everything out. Can use a knife to create a marble effect. 

10. Sprinkle chocolate chips on top. 

11. Bake for about 25 minutes.
